1) Roubina's Rosemary Roasted Turkey
INGREDIENTS:
- 3 tablespoons of freshly chopped rosemary
- 3/4 cup olive oil
- 3 heaping tablespoons of minced garlic
- 1 tablespoon of freshly chopped basil
- 2 teaspoons of ground black pepper
- 1 tablespoon of Italian seasoning
- Salt to taste
- 1 (10 to 12 lb) whole turkey
- 2 - 3 cups of chicken stock
DIRECTIONS:
1) Preheat your oven to 325 degrees.
2) In a mixing bowl, combine olive oil, garlic, rosemary, basil, Italian seasoning, black pepper, and salt. Whisk together. Set aside mixture + one stick of rosemary if you have any remaining.
3) Remove any fat deposits from turkey & pat dry. Loosen the skin from the breast. Be sure not to tear the skin.
4) Inside the skin - tub the turkey down with your oil & seasoning mixture. Any remaining mixture, use to rub down the outside of the turkey as well.
5) Place the turkey on a rack in a roasting pan. Add about 1/4 inch of chicken stock to the bottom of the pan. Roast in the preheated oven for 3 to 4 hours, or until the internal temperature of the turkey reaches 180 degrees.
6) Garnish with fresh rosemary & serve.
2) Argin's Asiago Mash
Not all mashed potatoes shall be treated alike! This savory golden mash is creamy, cheesy, and packed with flavor. Trust us when we say you won't need gravy. This dish is a star on its own. But if you insist, here is a link to one of our favorite gravy recipes.
INGREDIENTS:
Roasted Garlic:
- 3 whole heads of garlic
- 2 teaspoons of olive oil
- Pinch of salt
Potatoes:
- 3 pounds of golden potatoes peeled & sliced in half
- Freshly chopped thyme (about 5 sprigs)
- 5 tablespoons of melted butter
- 1 cup of of sour cream
- 1 cup of grated asiago cheese
- 1/2 cup of heavy whipping cream
- Kosher salt & pepper to taste
- Argin uses about 1/2 tablespoon of freshly crushed black pepper
DIRECTIONS:
1) Preheat your oven to 375 degrees.
2) Chop your garlic gloves in half & drizzle olive oil & salt over top of your cloves.
3) Wrap the gloves in foil, place them in a pan, and pop them in the oven. Cook for 15 - 20 minutes.
4) Boil your peeled & sliced potatoes until you can easily sever them with a fork. Once ready, drain them.
5) Place your potatoes in a mixer with the rest of the ingredients: butter, sour cream, cheese, heavy cream, salt, pepper, chopped thyme, and add your roasted garlic. Squeeze the garlic gloves into the mixing bowl (do not add the shell).
6) Either hand mash them, or use an electric mixer.
3) Albert's Apple Pie
If anyone knows us, then you know that Albert has a sweet tooth! It comes in handy as his taste in pie is VERY picky, so this apple pie recipe you can trust is above and beyond the rest!
INGREDIENTS
- 2, 9-inch pie crusts
- Can get from the store, order online, or make homemade.
- 7 large granny smith apples
- 1/2 cup of granulated sugar
- 1/2 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons of ground cinnamon
- Pinch of ground nutmeg
- 1 tablespoon of freshly squeezed lemon juice
- 1 large egg
INSTRUCTIONS
1) If using store-bought crusts, follow the instructions provided. If making homemade pie crust, prepare your crust first.
2) Preheat oven to 400 degrees.
3) Slice, peel, and take out the core of all of your granny apples.
4) In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice.
5) Remove pie crust from the fridge and let is rest at room temperature for ten minutes. On a lightly floured surface, roll one pie dough disc into about a 12" circle that's about 1/8th of an inche in thickness. Lay the crust into the bottom of your pie pan.
6) Place the filling over the pie crust inside the pan. If there is excess liquid in the bowl, discard and do not dump it into the pan. The last thing you'll want is a watery pie!
7) Roll out the second disc of pie dough until it is 1/8th of an inch in thickness and lay it over the apple filling.
8) Use a sharp knife to trim the dough around the outer edge of the pie plate. Lift the edges where the two crusts meet, gently pressing to seal and folding them under. Rotate the pie plate and repeat until the edges are neatly tucked. Make four slits in the top of the dough to let steam escape. Finally, place the pie on a baking sheet.
9) Brush the surface of the pie crust with egg wash.
10) Cover the edges with a pie shield or a strip of foil to keep them from over-browning during the first 25 minutes.
11) Place in the oven and bake for 25 minutes. Then, carefully remove the crust shield.
12) Turn the oven down from 400 to 375 and then place the pie back in the oven. Bake for an additional 30-35 minutes or until the top of the pie is golden brown.
13) Let your pie cool at room temperature for at least 2 hours. Serve, & enjoy!
As we gather around the table this Thanksgiving, let these three cherished recipes bring warmth and joy to your celebration. Each dish not only offers a burst of flavor but also a chance to create lasting memories with your loved ones. Whether you’re enjoying Grandma’s classic stuffing, a creamy pumpkin pie, or a savory roasted turkey, remember that the true essence of the holiday lies in the moments we share. So, as you prepare your feast, embrace the spirit of gratitude and connection that makes Thanksgiving truly special. Happy cooking and happy Thanksgiving!
